Ingredients:

Ingredients for dough 
  • Maida or Atta - 1 Bowl
  • Milk – 1 Cup
  • Curd – 1 Cup 
  • Salt to taste
  • Sugar to taste
Ingredients for Sabji Masala filling
  • Chopped Potatoes  - 1 Cup
  • Chopped Carrots  - 1 Cup
  • Chopped Capsicum - 1 Cup
  • Chopped Tomatoes - 1 Cup
  • Chopped Beans - 1 Cup
  • Chopped Coriander Leaves  - 1 Cup
  • Chopped Onion - 1 Cup
  • Chopped Gobi - 1 Cup
  • Chopped Garlic - ½ Cup
  • Masala (Secret)
  • Salt to taste
  • Oil

Method: 

Method for dough 
  1. Combine all the ingredients in a deep bowl and knead into a soft dough. Don't use water, using after 1Tbs oil. Knead well for 4 to 5 minutes.
  2. Cover the dough and keep aside for 5 to 6 hours.
Method for Sabji Masala filling
  1. Take a bowl. Add boiled mashed potatoes, green peas mixed with fried onion & garlic paste. Nicely mix all the items. Knead them together to make fine Sabji Masala Pur.
  2. Heat oil in a pan. Put mustard seeds into it. Add chopped potatoes, onions, gobi, beans carrots and garlic along with red chilli powder, salt and sugar to taste it.
  3. Let the mixture cook for about 2 minutes or so. Add tomato, capsicum mix the contents in the pan well by stirring it frequently. Keep the pan on low flame.
  4. Finally, add masala (secret) and some water in the mix cook for about 2 minutes. At last, add chopped coriander leaves and mix it. 
  5. Turn off the oven, ready Sabji Masala.
  6. Divide the Sabji Masala filling into equal portions and keep aside.

How to proceed: 

  1. Divide the dough into equal portions.
  2. Roll out a portion of the dough into a circle.
  3. Place one portion of the Sabji Masala Pur filling in the center.
  4. Bring together all the sides, seal it tightly and remove any excess dough.
  5. Gently roll the filled paratha again into a circle, while ensuring that the filling does not spill out.
  6. Gently press the centre of the paratha with your thumb.
  7. Repeat steps 1 to 6 to make more parathas.
  8. Cook on a hot tava (griddle), using a little oil, until both sides are golden brown.
  9. Repeat with the remaining dough and stuffing to make more parathas.
  10. Serve hot.
